Garlicky Baby Potato & Spinach Salad
Classic warm spinach salad using the most delicious ingredients!
Introduction
This classic warm spinach salad is simple to make, using only a few fresh and delicious ingrdients!
An added bonus to this recipe is that it can be made ahead of time. Simply leave the potato and onion mixture in the fridge. When you are ready to eat, toss in the dressing and add to spinach! This salad could be an entire meal or served as a side dish.
A few tidbits about the ingredients:
Potatoes — While I prefer to use baby potatoes, you can absolutely use large russet potatoes. Just be sure to cut the chunks small enough.
Spinach — Using the most fresh spinach you can find! If you aren’t a fan of spinach, you could also use kale or romaine lettuce.
Dressing — The dressing for this salad packs a punch. I suggest adding little bits at a time as not to overwhelm your palate.
Ingredients
- 1 tbsp butter
- 1 tsp olive oil
- 3 cups of baby potatoes, chopped
- 5 large handfuls of spinach, washed
- 1/2 cup white onion, thinly sliced
- 1 head of garlic
- 1/3 cup olive oil (for dressing)
- 1 1/2 tbsp balsamic vinegar
- 1 lemon, juice and zested
- 1 tbsp oregano
- 1 tsp dijon mustard
1. Place a skillet over medium-high heat and add 1 tsp olive oil along with 1 tbsp butter. Once the butter has started to melt and sizzle, add the chopped potatoes. Continue cooking the potatoes for 15-20 minutes, flipping as necessary until they achieve a nice golden brown outside, and soft on the inside. Set aside in a bowl.
2. While potatoes are cooking, prepare the salad dressing. Grate the garlic and add to a small bowl. Whisk in the olive oil, balsamic vinegar, lemon juice & zest, oregano, salt and pepper and dijon mustard. Continue whisking until the dressing is emulsified.
3. Add dressing and onions into the bowl with potatoes and mix together. The warmth from the potatoes will soften the onion.
4. Add the potato mixture on top of a bowl of spinach and mix thoroughly!
