Now that the twins have started daycare I find they need a little something in the morning to tie them over until they have breakfast. These mini muffins are a mess free option that travel well and can be eaten on the go!

One perk to the mini banana muffins is that they cook in less than half the time compared to a banana loaf – YAY! Because they are already pre-portioned, it makes them really easy to freeze and pull out as needed

Banana Chocolate Mini Muffins

Ingredients

  • 3 mashed bananas

  • 1/4 cup butter (melted)

  • 1/2 cup brown sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 1/2 cup flour

  • 1 tsp baking soda

  • 1/8 tsp salt

  • 3/4 cup mini chocolate chips

1. Preheat the oven to 350 degrees and grease your mini muffin tins

2. Mash bananas in a bowl and add to that the melted butter – combine using a whisk. Next up add in sugar, egg & vanilla, mix until incorporated

3. Add in the flour, baking soda, and salt. Whisk together. Lastly, fold in the chocolate chips!

4. Spoon in the batter, filling to the top. This recipe yields 24 mini muffins

5. Bake for 20 minutes. Allow to cool for 5 minutes and transfer to a cooling rack
