Blackened Cajun Chicken Tacos

One of my all time favourite tacos – blackened chicken! 

Introduction

One of my all-time favourite tacos – blackened chicken! This meal comes together quite easily – the chicken can even be made ahead of time, reheated and served. The mix of spices and fresh ingredients make for an exceptionally delicious spread

Ingredients

  • 2-3 chicken breasts or chicken thighs
  • 2-3 cups shredded lettuce
  • 2 cups diced cherry tomato
  • 1/2 purple onion finely chopped
  • 1 jalapeno thinly sliced
  • 2-3 limes
  • Handful of cilantro
  • 2 garlic cloves
  • Corn tortillas
  • Avocado
  • Shredded cheese
  • Salt & pepper

Blackened Cajun seasoning (this mixture will last you for multiple recipes)

  • 3 tbsp paprika
  • 2 tsp onion powder
  • 1 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp cayenne pepper

1. First step – mix together the blackened cajun seasoning. This recipe makes more than enough so you will have extras for next time

2. Begin by butterflying your chicken breasts so you are working with a thin piece. If using chicken thighs, leave as is

3. Brush the chicken with olive oil and place in a zip lock bag. Add to that 2-3 tbsp of your cajun seasoning. You want to make sure you have enough seasoning to fully coat the chicken. Seal and mix

4. Over medium heat, add in 1 tbsp of olive oil. Once your pan is nice and hot, add in the chicken. Cook for about 5 – 7 mins each side. Set aside. Once cooled, cut into thin strips

5. While chicken is cooking, prep your toppings. Shred cheese & lettuce, thinly slice avocado and dice your jalapeño, tomato and onions for the salsa

6. To build the salsa, mix together tomato, onion, jalapeno, finely chopped cilantro, garlic, generous amounts of lime juice, and s&p. I even like to add in some lime zest for extra flavour

7. In the same pan you cooked your chicken, add a splash of olive oil and turn up to medium high heat. Add in the corn tortilla – flipping after 1 min or so. You want the tortilla to get some nice char marks and heat up so it becomes pliable

Okay, let’s build some tacos! On your warm tortilla layer lettuce, chicken strips, cheese, avocado, and tomato salsa
