Blueberry Cottage Cheese Pancakes
They are sure to please!
Introduction
When the twins were first learning how to eat, pancakes were my go to. I promise you I have every type of pancake recipe memorized! This particular recipe is one of my favourites – packed with generous amounts of protein, fibre and calcium – they are sure to please!

Ingredients
- 1 1/2 cups milk of choice
- 4 eggs
- 3 ripe bananas
- 2 cups cottage cheese
- 3 1/2 cups oats
- 1 tbsp flax
- 1 tsp vanilla
- 1 cup fresh blueberries
- 1 tsp baking powder
- 1-2 tsp cinnamon
✖️Add all of the ingredients into a blender, on high. I find putting the liquid ingredients in first helps to create a really great consistency, without having to constantly stop and stir
✖️I like to use a nonstick griddle around 325 degrees or you can use a pan on medium heat. This recipe is super versatile – too runny add more oats, too dry add more milk
✖️Pour approximately 1/4 cup of batter onto your griddle or pan. Cook until you see bubbles form on top (2-3 mins), flip and finish off (another 3-4 mins)
✖️Enjoy these with peanut butter, syrup or fresh fruit. I like to put the extras in the freezer and pop into the toaster as needed. This recipe makes a huge batch!
