Introduction

This feta tomato bake is all the rage in the food blogging world right now. I obviously had to give it a go but with a little twist! I thought I would mellow out the strong flavour of the feta by adding ricotta cheese – turned out great.

The final touch is a generous scoop of pesto. So good!

Cheesy Tomato Pasta Bake

Ingredients

  • approx 2 cups of cherry tomoatoes
  • 1/2 cup – 1 cup of feta cheese
  • 3-4 tbsp of ricotta cheese
  • 1 head of garlic
  • 1 tsp chili flakes
  • fresh thyme
  • fresh basil
  • 1 tbsp olive oil
  • 2 tbsp pesto

✖️Preheat your oven to 400 degrees

✖️In a casserole dish, add tomatoes. Drizzle olive oil, add salt and pepper – mix together. Add in the brick of feta cheese, approx 1/2 cup as well as the ricotta cheese throughout the tomatoes – the more the better!

✖️Cut the top off the garlic head off and drizzle with olive oil – cover with tin foil and add that to your casserole dish. Sprinkle the fresh thyme over the mixture

✖️Bake for 45 mins

✖️While tomatoes are baking, cook up your pasta – anything goes!

✖️As soon as the tomato mixture comes out of the oven, stir it up – mixing together all the cheesy tomato goodness. Squeeze out the roasted garlic – you can mash it with the back of a spoon. Add your pasta along and stir in 2-3 tbsps pesto. Give it a taste and possibly season with more salt and pepper

Serve up with fresh basil – delicious! Another great addition would be adding slices of kalamata olives – yum!!!
