Chickpea Gyro
Easy peasy weekday dinner
Introduction
Easy peasy weekday dinner – can be customized to everyone’s taste preference! This is a great meal you can prep ahead of time, so if your in a rush all you need to do is assemble.
Ingredients
- Hummus or tzatziki
- Romaine lettuce
- Tomato
- Red onion
- Jalapeños
- Cucumbers
- Kalamata olives
- Naan bread
- Chickpeas
- Cumin
- Paprika
- Garlic powder
- Oregano
- S&P
- Feta cheese
✖️Start by rinsing canned chickpeas, lay out on tea towel to dry – this will help get those chickpeas crispy! You can gently roll a paper towel or dish cloth over them. Be careful not to squish.
✖️Chop your veggies. I used traditional Greek vegetables – tomato, cucumber, olives, onions., Nice thing about this dish, is that you can set all your toppings up like a taco bar so people can make their own
✖️On medium heat, add 1 tbsp of oil along with chickpeas. Add salt and pepper. Cook for approx 8 mins, stirring frequently so they don’t burn.
✖️Add into your pan –
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- Extra salt & pepper
✖️Cook for a few more mins, remove from pan into a bowl lined with paper towel
✖️In the same pan, add a touch more olive oil, toast Naan bread, couple mins on each side
Assemble gyro –
✖️on warm naan, spread a good healthy dollop of tzatziki
✖️add lettuce, tomato, cucumber, olives, feta, jalaps, sprinkle of oregano
