Cobb Salad
This hearty salad is so delicious and so filling.
Introduction
This hearty salad is so delicious and so filling. I always find if I’m eating a salad for dinner, I need it to be chalked full of all the goods to ensure I’m full and not snacking later on!

Ingredients
- 1-2 cups of greens – I use a combination of spinach and arugula
- 1-2 boiled eggs
- 1 diced tomato
- 1/4 cup cubed aged cheddar cheese
- Handful of shaved ham
- Few slices of avocado
- Sliced red onion
- Grilled chicken breast – I used a leftover Quinoa Chicken Tender and it added a great texture and flavour
For your dressing
- In a mason jar, add the following and give it a good shake!
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp dijon mustard
- Splash Worcestershire sauce
- 1 clove chopped garlic
- Squeeze of lemon juice
- S&P
Build your salad! Start by tossing in your lettuce, layer on the goods then drizzle over your dressing
