Cranberry Banana Oat Cookies

So so soft, a little sweet but mostly chalked full of nutrients.

Introduction

The twins were asking for cookies, and we were running dangerously low on groceries! We tossed these cookies together with the goods we had in the house – I think the kids had three each as they came out of the oven! So so soft, a little sweet but mostly chalked full of nutrients. These would be perfect for a new eater – just omit the craisins. This recipe makes 48 cookies – so freeze a bunch and use as needed!

Ingredients

  • 1 cup unsalted butter (softened)
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup vanilla oat milk
  • 1 tbsp vanilla extract (I used vanilla paste and it added a wonderful flavour)
  • 3 ripe bananas
  • 1/2 cup cottage cheese
  • 3 cups oats
  • 2 cups flour (I used 1 cup all purpose/1 cup whole wheat)
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1/4 tsp nutmeg
  • 2 tsp cinnamon

✖️Preheat your oven to 375 degrees and line two baking sheets with parchment paper

Using a stand or hand mixer, blend together your soft butter and brown sugar. Once that’s combined, add the rest of your wet ingredients – honey, milk, vanilla, banana, cottage cheese – mix well

✖️In a separate bowl, add your dry ingredients together – oats, flour, salt, baking soda, nutmeg and cinnamon. Mix together

✖️Add your dry ingredients to wet, little bits at a time so your flour doesn’t explode everywhere!

✖️Once everything is combined, fold in 1 cup of craisins – you could also add in mini chocolate chips (would be a delicious addition!)

✖️Using a cookie scoop – scoop equal size balls onto your cookie sheet. Add a few more craisins to the top for some extra yumminess! Press down onto the balls slightly, I just used my spatula. Stick in the oven and bake for 10 mins – transfer to rack to cool

This makes a huge batch, so I froze a bunch – left the rest in the fridge to nibble on through the week!
