Dijon Panko Crusted Salmon
Perfectly flaky salmon with a delicious flavourful crust!
Introduction
Looking for a weeknight dish to toss into your rotation? This is it! A major win with fish is that it takes next to no time to cook.
The crunchy topping makes this a toddler favourite as well. So much flavour and crunch!

Ingredients
- 4 (6oz) salmon fillets
- 3/4 cup panko breadcrumbs
- 2 tbsp dijon mustard
- 2 tbsp olive oil
- 4-5 cloves garlic, grated
- 1 tsp onion powder
- 1 tsp paprika
- salt & pepper
1. Preheat oven to 375 degrees and line baking dish with parchment.
2. Mix together panko, dijon mustard, olive oil, garlic, onion powder, paprika and salt & pepper
3. Place salmon evenly on the baking dish and add the panko crumble on top. I like to press it down a little so I can fit more on top!
4. Bake for 23-26 mins depending on thickness of the salmon. Around 9-10 minutes per inch of thickness.
