Greek Power Bowl

All the parts of this dish can be made ahead of time – so it can be easy peasy to serve in a pinch.

Introduction

Here’s the thing about bowls, they’re actually a lot of work! So many different ingredients and preparation. I usually schedule in a bowl type meal when I have leftovers to use up. I came up with this one after we had burgers and fries for dinner one night, with so many leftover fries – weird right! All the parts of this dish can be made ahead of time – so it can be easy peasy to serve in a pinch.

Ingredients

  • 4-5 potatos
  • 1 can of chickpeas
  • 1 head of cauliflower
  • Cucumber
  • Cherry tomato
  • Olives
  • Jalapeños (optional)
  • Arugula
  • Tzatziki
  • Feta cheese
  • Fresh dill
  • 1/2 lemon juice
  • 2 tbsp Garlic salt
  • 1 tbsp dried oregano
  • 1/2 tsp cumin
  • 1/4 tsp paprika

Greek Fries –

✖️Preheat oven to 425 degrees and line baking tray with parchment

✖️Wash and cut potatoes into fry stripes – you can leave the peel on, add to the nutrients! Toss in 1 tbsp of olive oil, 1 tbsp garlic salt, 1 tbsp dried oregano, salt & pepper. Spread on baking tray and stick in the oven for approx 50 mins. Tossing half way through.

Cauliflower –

✖️Wash and cut your cauliflower into bite sized pieces. Toss into the same pan you cooked your chickpeas in, add a touch more olive oil, salt and pepper. Cook for approx 10-15 mins, until the cauliflower are soft and slightly charred

Veggies –

✖️Chop up your cherry tomatoes, cucumber, kalamata olives, feta cheese, jalapeños (optional!) Whisk together 2 tbsp olive oil, 1/2 lemon juice, salt and pepper, handful of fresh dill and a dash of balsamic vinegar. Coat your vegetables and set aside

Build your bowl!

✖️Lay down a handful of arugula, a scoop of cauliflower, vegetable mix, greek French fries and chickpeas. Add a nice big dollop of tzatziki and enjoy!
