No Bake Mango Bars
A delicious treat anytime of the year, no oven required!
Introduction
Fruity with a slight kick of coconut, these No-Bake Mango Bars are perfect when you are in need of a quick snack.
These bars are packed with fibre from the oats and mangos, and a little natural sweetness from the honey and dates. The twins not only help me make these, they absolutely love to snack on them.
Luckily the bars can keep in the freezer for up to 3 months – so pull out a few at a time for an easy snack!

Ingredients
- 2 cups dried mango
- 8 medjool dates
- 1 cup oats
- 1 cup cashews
- 1/4 cup hemp seed
- 1 cup shredded coconut
- 1/4 tsp sea salt
- 2 tbsp honey
- 2 tbsp coconut oil
- 1 tsp vanilla
1. Begin by soaking the dates and mango in boiling hot water for 15 minutes. This will soften them and allow for easier mixing. Line bottom of 12×8′ baking dish with parchment paper and set aside
2. Add oats, cashews, hemp seed and coconut to the food processor and mix. Add in the softened dates and mangos and continue mixing
3. Melt together the honey, coconut oil, sea salt and vanilla. Pour over the mixture and blend one last time. You can leave the bars a little chunkier or blend all the way until you have a paste-like texture
