Springtime is finally here and there are coloruful explosions all over our house – and not just giant messes from the kids. All the pastel colours of the season are out in full force and I’m here for it, especially in the kitchen. Sprinkles are a food group in our house – we put them on everything!
We all know and love the classic rice krispies treats, but rice krispies are next to impossible to find. After speaking to an employee at the grocery store as to where all of the rice krispies have gone, he explained Kellogg employees are on strike to demand better wages, health care and retire benefits. Time to pivot and use different delicious options for our Marshmallow Easter Cereal Crunch Bars!

As you know, baking with the twins is one of my favourite activities to do with them. The absolutely adore helping, devouring and sneaking mini eggs while I try and keep the kitchen somewhat clean and organized.

TO MAKE THESE EASTER BARS, YOU WILL NEED:
- 9×13′ baking dish (the one I use!)
- parchment paper (I love these pre-cut ones from Amazon – Parchment Paper Sheets)
- pretzels
- shreddies
- cinnamon chex
- butter
- marshmallows
- vanilla extract
- mini eggs
- rainbow sprinkles

SUBTITUTIONS:
If you are missing any of the above ingredients, no sweat! This recipe is so forgiving – any cereals work – here are some suggestions!

HOW TO MAKE EASTER CEREAL BAR
Start by lining a 9×13″ baking dish with parchment paper and coat with non-stick spray, set aside.
In a large bowl, add Shreddies, Cinnamon Chex and pretzels. I like to break up the pretzels so I don’t have large pieces in each bites.

In a large pot, melt the butter, salt and marshmallows together. on medium low heat. Continually stir the marshmallows and butter together – approximately 5 minutes until smooth.

Remove from heat and stir in the vanilla.
Add the cereals and pretzels into the melted marshmallows until fully coated. Gently fold in the Mini Eggs [you’ll want to do this quickly so you avoid the chocolate melting completely!]

Transfer the mixture to the prepared baking dish, gently press down and top with sprinkles

Allow to set for 30 minutes before cutting and serving
TIPS FOR PERFECTING YOUR BARS
- Be sure to keep stirring your marshmallow mixture while it is melting to make sure it doesn’t burn.
- Do not add the vanilla extract until you’ve removed the marshmallow mixture from the heat.
- Combine the cereal with marshmallow mixture before you add in the mini eggs – this will keep the colour vibrant and avoid the chocolate from melting.
- Don’t press down too hard when transferring the cereal mixture to the baking dish. Your cereal bars may turn out hard and really dense.
STORING AND FREEZING
These marshmallow cereal bars can be stored in an airtight container or large ziplock bag at room temperature for 2-3 days. You can also cover the baking dish with plastic wrap as well. You can freeze these bars, but they will be very hard and loose their gooey nature. If you do freeze them, leave them at room temperature for an hour before enjoying.
