This delicious veggie-packed salad is a great addition to any meal. The nice part is that it lends well to whatever vegetables you have available in your fridge. The dressing is made up of simple everyday ingredients as well!
Ingredients
- 2 cups dry orzo pasta
- Premixed spiced (or make your own!)
- 1 cup diced tomato
- 1 cup diced cucumber
- 1 cup diced peppers
- 1/2 cup sliced olives
- 1/2 cup finely diced onion
- 1/2 cup feta cheese
- Handful fresh basil
✖️Begin by boiling your orzo pasta – it should only take 8-10 mins. Rinse under cold water once cooked, and set aside
✖️While your pasta is boiling, chop up your vegetables – this salad is so flexible so please use any combination of veggies you like! Mushrooms, jalapeños, broccoli, zucchini etc. For the twins, I usually add in chickpeas and avocado as well for some healthy fats and protein!
✖️Once pasta has cooled, add the noodles to the veggies. Mix around
For the dressing, whisk together
- 1/4 cup olive oil
- 1-2 cloves chopped garlic
- Loads of S&P
- Juice from one lemon
- Squeeze of braggs
✖️Add little bits of dressing at a time, you want to taste test to make sure the dressing isn’t too over powering for the salad!
