Panang Red Curry

Introduction
As I navigate feeding my twin toddlers, it’s always been a goal of mine to expose them to a wide variety of foods, textures and flavours. Curries are a perfect way to introduce meats and vegetables with different or unique flavours. This traditional Thai dish is packed full of flavour and will soon be on your weekly meal rotation!
Ingredients
- 2 lbs meat – cut into bite-sized chunks
- 1 can coconut milk
- 1&1/2 -3 tbsp Aroy-D red curry paste (found at T&T or HMart)
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1 clove garlic minced
- 1 red pepper sliced
- 1 yellow pepper sliced
- 5 lime leaves (found at T&T or HMart)
- Handful of Thai basil (also known as holy basil) – typically found in Asian supermarkets
✖️Begin by cutting meat into bite sized pieces. Typically I like to use chicken or chicken thighs but you can also use beef, pork, shrimp or even tofu. Set aside.
✖️One medium high heat, cook the curry paste with 3 tbsp of the coconut milk until you’ve formed a paste. Add in meat and cook through. Once your meat has almost completed cooking throughout, add in half of the remaining coconut milk and stir.
✖️Add in fish sauce, sugar and garlic. Cook for 2 mins. Add in remaining coconut milk and stir.
✖️Add in red and yellow peppers along with the onion. Stir well and then cover with a lid for a few mins, stirring occasionally. You don’t want to over cook the vegetables, just enough until they are soft.
✖️Stir in the lime leaves and basil, continue cooking for another minute. Turn the heat off and put the lid on for your final few minutes. Lift the lid and ta-da! Delicious flavours await.
Serve over jasmine rice!
