Peanut Vegetable Lettuce Wraps

Introduction

Quick and healthy, these lettuce wraps are so fresh and delicious. They are ready in under 30 minutes which makes this one of my favourite weeknight meals. The filling is really versatile – you can add in any vegetables you have as well as protein. I’ve made these with tofu, shrimp, chicken and beef!

Ingredients

  • Green leaf lettuce
  • 1 red bell pepper, chopped
  • 1 1/2 cups grated carrots
  • 1 cup snow peas, chopped
  • 1/2 onion, chopped
  • 1 cup mushrooms, chopped
  • 1/2 cup green onion, diced
  • 1/4-1/2 cup peanuts
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 4 tbsp rice vinegar
  • 4 tsp honey
  • 1/2-3 tsp chili flakes (depending on preference)
  • 6 cloves of garlic, grated
  • 1 tbsp ginger, grated
  • 2 tsp cornstarch
  • 1/4 cup cilantro, chopped
  • 1-2 tbsp hoisin
  • 3-4 cups steam fried noodles

✖️In a skillet with a splash of olive oil, on medium heat, sauté onions, peppers, carrots, snow peas, onion, mushrooms, green onions and peanuts until soft – approximately 15 mins

✖️While vegetables are cooking, whisk together the sauce. In a bowl add soy sauce, sesame oil, rice vinegar, honey, chili flakes, garlic, ginger, cornstarch and cilantro

✖️Once vegetables are soft, add in the uncooked noodles and turn the heat down to medium-low. Pour sauce over top and mix around for approximately 5 mins or until the noodles begin to soften and incorporate the flavour of the sauce. The last minute of cooking, add the hoisin to the mixture and incorporate

✖️Build your wrap. On a piece of lettuce, dish up a generous amount of vegetable filling. Top with a sprinkle of cilantro and enjoy!
