Pineapple Coconut Popsicle
Deliciously refreshing, full of flavour and hydrating to top it off! Nothing screams summer more than a Pineapple Coconut Popsicle!
Introduction
Coconut water is an excellent source of natural electrolytes – potassium & sodium – which aid in hydration and energy replenishment. Add in the pineapple slush for a healthy dose of vitamin C and a touch of fibre.
The best part about this recipe is that you can sub out the pineapple for any fruit you have in the house AND kiddos can help make them

Ingredients

500 ml coconut water

2 heaping cups of frozen pineapple

2 tbsp honey

1/2 cup-1 cup vanilla oat milk
–> Add pineapple, honey and 1/2 cup of milk to a blender and puree until smooth. Add in extra milk as need to reach a slushy like consistency
–> Using a popsicle mold, pour 2 tbsp coconut water in each cavity, spoon in a few dollops of pineapple slush and top off with more coconut water
–> Freeze for minimum 3-4 hours until firm
–> Remove from mold and enjoy!
