Puffy Pesto Brie Bites

Introduction
Add puff pastry to your list next time you go shopping. It keeps forever in the freezer and can be used in so many different way! Here’s a savoury take:
Ingredients
- Tomato
- Pesto
- Brie cheese
- Puff pastry
- 1 egg
- Balsamic glaze
✖️Preheat oven to 425 degrees. You’ll need to take your puff pastry out of the freezer approx 1 hr before you plan to start cooking
✖️Unfold pastry. Lay flat and cut your squares. I made these ones fairly small so they could fit on a plate with other goodies. I cut the dough using a pizza cutter. Works so well!


✖️Poke the inside with a fork a few times to deflate the puff where the goods will sit. Place your squares on a baking tray with parchment.
Assemble –
✖️Spread the pesto along the middle – leaving about 1-2 cm around the edge
✖️Layer on thinly sliced Brie
✖️Add to that diced tomatoes with a dash of balsamic
✖️Fold the edges over and brush with egg wash
Bake for 20 mins, until golden brown
