Quinoa Crusted Chicken Tenders

Introduction
A delicious twist on a favourite meal. The quinoa creates a nice crunchy texture while adding extra protein and fibre to your meal! This would also be a great chicken Parmesan substitute as well!

Ingredients
- 1/2 cup flour
- 2 eggs
- 2 cups cooked quinoa
- S&P
- Chicken breasts
** This recipe is great if you’ve already got leftover quinoa in the fridge. Otherwise you will need to make a batch (1 cup quinoa/2 cups water), and then let it cool before using
✖️Preheat oven to 400 degrees. Line baking tray with parchment and set aside
✖️Start by organizing your ingredients. You’ll need
*one bowl for flour (add in salt & pepper)
*one bowl for your eggs (whisk really well!)
*one bowl for your quinoa
✖️Cut your chicken breasts into strips. Try to keep them the same thickness for even cooking
✖️Next up, you are going to dredge your chicken breast through the flour, then egg, then quinoa. The quinoa should stick fairly well, however you may have to press the kernels into the chicken slightly


✖️Place the tenders on the baking tray, spaced evenly so they don’t get soggy!
✖️ Bake for 20 mins, flip, bake another 15 mins. To get them extra crispy adjust your oven to broil low for 3-4 mins to finish them off!
Serve with your dip of choice. Kiddos used tzatziki and I of course dipped them in hot sauce!
