Rum Cake

Perfect end to your Christmas dinner!


This is my absolute favorite dessert – the perfect end to your Christmas dinner! It’s decadent, moist, flavourful and easy to whip up.


  • 1 box of Yellow cake mix
  • 1 box Instant vanilla pudding mix
  • 4 Eggs
  • 1/2 cup Water
  • 1/2 cup Vegetable oil
  • 1/2 cup dark rum

✖️Preheat oven to 325 degrees. Grease and flour a 10”fluted cake pan. I use room temperature butter on a paper towel, rub it all over the inside of the pan. Put a little flour in the pan and shake it around until the sides are coated. Set aside

✖️Beat together cake mix, eggs, vanilla pudding mix, water, oil and rum. I like to use a hand mixer to make sure I get all the lumps out. Pour into cake pan

✖️Bake for 1 hour. Let the cake cool, then invert it onto plate/cake stand. Poke a few holes along the top with a knife, this will help the glaze soak through


✖️Melt 1/2 cup butter on med heat. Add to that 1 cup white sugar, 1/4 cup water. Whisking frequently. Allow this to come to a boil for 5 mins. Remove from heat and stir in 1/2 cup rum

Pour all over cake. Top with powdered sugar! This cake is so moist and so delicious. Serve alongside vanilla ice cream or with a big dollop of whipping cream!
