Sweet Potato Bacon Bites
Bacon and cheesy goodness!
Introduction
A family favorite – these sweet potato bites are so delicious and addicting! Topped with bacon and cheesy goodness, these are a great addition to any meal or appetizer spread. The sweet potato can be substituted for regular potatoes as well – I just love how soft the sweet potatoes cook up!

Ingredients
- 2-3 sweet potatoes
- 1 package of bacon
- 1 cup shredded cheese (I prefer old cheddar!)
- Salt and pepper
- Olive oil
For the bacon –
Preheat oven to 400 degrees and line baking tray with parchment. I like to cut the bacon package in half so I have smaller pieces to work with. Lay your bacon strips evenly on baking tray and put into the oven for 40 mins, flipping bacon at the 20 minute mark
✖️Once cooked, place bacon on paper towel to soak up extra grease and set aside. Once bacon has cooled, cut into pieces
For the potato rounds –
Wash and cut potatoes into rounds – trying your best to ensure equal thickness, so they cook evenly. Toss with olive oil and salt & pepper. Spread potato rounds on a baking sheet lined with parchment and bake at 400 degrees for 20 mins. After 20 mins, flip the rounds and continue baking for 10 more minutes
✖️Pull the potatoes out of the oven and add your bacon and generously sprinkle on cheese. Return to the oven for 10 more minutes, until cheese is fully melted
✖️Serve potatoes with sour cream or greek yogurt. Top with a sprinkle of green onions – delicious!
