The Brussel sprouts pair perfectly with the bacon and sweet potato, and the tahini dressing adds the perfect kick. These bowls are so flexible – you can really add anything you have on hand, so long as the flavors blend well!

Ingredients

  • Sweet potato bacon bites <— click for recipe!
  • 3-4 cups diced Brussel sprouts
  • 1/2 cup diced purple onion
  • Mixed greens – spinach, arugula, kale
  • 1/2 cup Sunflower seeds
  • 1 avocado chopped
  • 1/2 cup tahini paste
  • 1/4 cup lemon juice
  • 2 tbsp white wine vinegar (or apple cider works too!)
  • 1 tbsp soy sauce (Tamara or Braggs soy aminos)
  • 1-2 garlic cloves
  • Salt and pepper

✖️Brussel Sprouts –

On medium heat, saute your diced sprouts along with onion in a splash of olive oil. Adding in salt and pepper. Cook for approximately 10 minutes or until soft. Set aside

✖️Tahini Dressing –

In a blender add the tahini paste, lemon juice, white wine vinegar, soy sauce, garlic and salt and pepper – blend until smooth. If you find the dressing is too thick, you can add more lemon juice or soy sauce

✖️Sweet Potato Bites – I usually try to make these ahead of time and use the leftover for the bowl as they can be a little time-consuming!

✖️Toast your sunflower seeds – this can be done on the stove in 1 tsp of olive oil over medium-low heat. Stirring often so they don’t burn

Build your bowl! Add greens to the base, layer your potato bites, generous amounts of Brussel sprouts, sunflower seeds, avocado, and top with garlicky lemon tahini dressing
