Tomato Spinach & Feta Egg Bites
The potatoes come out so perfectly cooked and crispy.
Introduction
These are a great make-ahead breakfast idea for the whole family. They’re easy to whip up and they make next to no mess, especially handy if you are eating on the run! The combinations you can create are endless – ham & cheese, peppers & onion, dill & salmon, turkey & cheddar.

Ingredients
- 8-10 eggs
- 3/4 cup diced tomato
- 3/4 cup chopped spinach
- 1/2 cup crumbled feta
- Salt & pepper
✖️Preheat your oven to 350 degrees and grease your mini muffin tin really well (regular muffin tins work too!) Don’t forget this step, otherwise your eggs will stick to the muffin tin! Another option is to use a silicone baking mold – the eggs come out perfect every time!
✖️Whisk together eggs – for 24 mini bites I use 8 eggs, for 24 regular size I use 10 eggs. Add in loads of sea salt & pepper
✖️Prep your spinach, tomato and feta – stir into the whisked eggs
✖️Using a ladle or even a tablespoon, pour the mixture into the muffin tin. You want to fill the cup approx 1/2 to 3/4 way full. They fluff up quite a bit
✖️Bake for 20 mins. Take the egg muffins out of the tin and rest on the counter for 10-15 mins before refrigerating
Pop them in the microwave for 20-30 seconds as needed. Perfect for a quick breakfast on the go, or even as a snack
