Air Fryer Sesame Lime Chicken

Trying to add some variety to your weekday chicken meals? This sesame lime chicken is a great way to spice up basic chicken breast using your best friend the air fryer!


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs cut into 1 inch thick strips
  • 1 cup corn starch
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 6 cloves garlic, chopped
  • 1 inch ginger, grated
  • zest from one lime
  • juice from one lime
  • 34 cups green beans
  • 1 red pepper, thinly sliced
  • cooked rice (sushi, basmati or jasmine)

Instructions

  1. Preheat the air fryer, 3 minutes at 400 degrees. Once the fryer is preheated, spray with cooking oil.
  2. In a small bowl, beat the eggs. Put the cornstarch in a separate shallow bowl.
  3. Place the chicken in the eggs, toss to coat.
  4. Remove the chicken pieces from the eggs, letting the excess egg run off. Drop the chicken pieces into the cornstarch and toss to coat them well, shake off excess and arrange the chicken in the air fryer, single layer (you will likely have to cook the chicken in 2 batches).
  5. Air fry the chicken at 400 degrees for 10-12 minutes, until the chicken is golden brown and cooked throughout. Turn the chicken pieces over halfway through cooking.
  6. While the chicken is cooking, prepare the beans. Add 1 tsp of olive oil to a pan over high heat. Once the oil starts jumping, add in the green beans. For the next 4-5 minutes, stay close continually stirring the beans to prevent burning. You want the beans slightly charred.
  7. Once majority of the green beans have char marks, add in 1/2 cup of water and turn heat to low and let the beans simmer. At this point add in salt and pepper along with a sprinkle of sesame seeds. Let cook for approximately 5-7 minutes, until beans soften but are still firm. Remove from heat.
  8. In the same pan you cooked the beans, make the sauce. Over medium heat, add in the soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, lime zest and lime juice. Bring to a simmer and reduce.
  9. Once sauce has thickened, add in the cooked chicken. Toss to coat.
  10. Build your bowl. Over a bed of rice, add the air fried sesame lime chicken, green beans, red peppers and garnish with green onions. Sprinkle with extra sesame seeds and serve!
