Chickpea Salad Sandwich
A great vegetarian alternative to a traditional tuna salad sandwich!
Introduction
A great vegetarian alternative to a traditional tuna salad sandwich! The chickpeas are such a good texture and mix up so well with the dill pickles and celery. Best of all, almost everyone has a random can of chickpeas in the back of their pantry just waiting to be used! The kids love to dip crackers in the mixture and top it with cheese or fresh sliced tomatoes!
Chickpeas offer such a great source of protein, iron and fibre – as you can tell I use them in so many toddler friendly dishes.

Ingredients
- 1 can of chickpeas
- 1/2 cup diced pickles
- 1/2 cup diced celery
- 1/4 cup diced onions
- 1/2 cup mayo or Greek Yogurt
- 1 garlic clove
- 1 tsp garlic powder
- 1 tsp onion powder
- Sprinkle of paprika
- Salt and pepper
- Begin by draining and rinsing your chickpeas, from this point you can mash them up with a fork by hand or I find using a food processor works really great. Give them a few pulses and everything is chopped – I also add in the garlic clove too. By using the food processor, you also take care of any unwanted chickpea shells as well.

Add your mashed chickpeas into a bowl along with diced pickles, celery, onion, mayo, garlic powder, onion powder, paprika, salt and pepper. Mix together
From here, you can layer the mixture on toast, adding some fresh sprouts or cucumbers. It’s also delicious spread on crackers with cheese!
