Dark Cherry Flax Muffins

Introduction
These muffins are super simple and super easy. The flax offers a nice healthy dose of fiber as well as omegas. The fruit can be exchanged for anything you have on hand! If using frozen fruit, just make sure you thaw and squeeze dry before adding
Ingredients
- 1 & 1/2 cups whole wheat flour
- 1/2 cup ground flaxseed
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup honey
- 1 egg
- 2/3 cup milk of choice
- 1/2 cup whole dark cherries
✖️Start by placing your frozen cherries in a bowl of warm water – we want the cherries to thaw and let off as much extra liquid as we can
✖️Preheating your oven to 400 degrees and line the muffin tin with wrappers. If you find your muffins tend to stick (they shouldn’t!) you can always add a little spray of pam in each liner. I like to buy parchment liners which really ensure the muffin stays together and doesn’t stick! This recipe makes 12 muffins
✖️In a large bowl mix together flour, flax, baking powder and salt
✖️In a separate bowl whisk together honey, egg and milk
✖️Cut up cherries into quarter pieces and pat dry with a paper towel. Add the cherries to your dry ingredients. Slowly add the liquid ingredients to the dry – using a spatula to incorporate, until dry ingredients are moistened. No overmixing!
✖️Spoon batter into muffin tin. Pop into the oven and cook for 15-17 mins, until tops are golden brown. Remove and let cool!
