Lemon Coconut Power Bars

You could easily make these bars into balls as well – to grab and go!

Introduction

My usual energy bar consists of chocolate and peanut butter – while I still love that combo, I thought I would change it up a little with some new flavours! Same methodology as the FYL energy bars everyone loves, just switching up a few ingredients. You could easily make these bars into balls as well – to grab and go!

Ingredients

  • 1 cup oats
  • 1 cup cashews
  • 15 pitted medjool dates (soaked in hot water for at least an hour)
  • 1 cup unsweetened shredded coconut
  • 1/4 cup hemp seeds
  • 1 tsp vanilla
  • 1 tbsp fresh lemon juice
  • 2 tbsp coconut oil
  • 1 tbsp honey
  • 1/2 cup icing sugar
  • 1/2-1 tbsp water
  • 1-2 tsp lemon zest

✖️In a food processor combine oats, cashews, softened medjool dates (soaked in hot water for at least an hour), unsweetened shredded coconut, hemp seeds

✖️In a bowl, melt in the microwave or on the stove, vanilla, fresh lemon juice, coconut oil and honey. Once melted, add this to the food processor and blend everything together until you have a paste like texture. You can always add a touch of milk if you find the texture to be too “thick”

✖️Line a baking sheet or baking dish with parchment and press the mixture down – trying to keep it as even as possible. You can use the bottom of a cup to smooth it out.

✖️Place in the freezer for 30 mins

✖️While the bars are forming, whisk or beat together

  • 1/2 cup icing sugar
  • 1/2-1 tbsp water
  • 1-2 tsp lemon zest

✖️Drizzle the sweetness on top, adding extra lemon zest and finish off with a sprinkle of coconut chips

Place back in the freezer to let everything set
