Toddler Deviled Eggs

These deviled eggs are full of tons of healthy fats, proteins and flavour. 

Introduction

One of the twins favourite foods for sure – although I say that a lot! These deviled eggs are full of tons of healthy fats, proteins and flavour. When I was first introducing solids to the kids, I would mash the entire egg up with the avocado etc – as the their ability to handle food evolved, I slowly turned them into a deviled egg – or as they call it “pickle egg”

Ingredients

  • 6 eggs
  • 3 tbsp plain greek yogurt
  • 1/4 avocado
  • 1 large pickle finely chopped
  • 1 tsp dijon
  • Pepper

✖️Begin by boiling the eggs – once water comes to a boil, gently place egg into the pot and set a timer for 12 mins

✖️While eggs are cooking, mix up your other ingredients. Combine the yogurt, avocado, chopped pickle, dijon and pepper in a small bowl – you will add the cooked egg yolks to this mixture

✖️When eggs are finished cooking, immediately place them into ice water to cool down and separate the shells. Once eggs have cooled (approx 5 mins), peel the shell off and cut lengthwise. Scoop out the yolk (gently!) and add to the yogurt mixture. Combine

With a small spoon, scoop the yogurt mixture back into the egg whites, make sure to get lots of yummy pickles in each bite!
